Ingredients

1 ½ Sweet Potatoes

1 Onion

3 Garlic cloves

1 Can Kidney Beans

1 Can Sweet Corn

3 Tbs Green Boy Protein (we used Mung Bean)

Olive Oil

Spices (we used Oregano, Rosemary, Thyme, Sweet Paprika, Chili, Salt & Pepper)

Truff Sauce (optional)
For these protein packed beans slice sweet potatoes, onion and garlic and spread on a baking tray with spices and olive oil. Keep half of the onion aside for the protein beans mix and off it goes into the oven for +- 30 minutes at 350°F or until the sweet potatoes are soft and slightly crispy.
In the meantime, fry the rest of the onion with olive oil and spices in a pan. Add the beans & corn and let it simmer. Lastly, add your Green Boy Mung Bean protein and cook for a few more minutes to create a creamy bean mix. Once everything is ready arrange on a plate and devour!
PS: We like to add a bit of Truff sauce for a little bit of spiciness.
